I’m always looking for healthy ways to prep my body for the day with nutrient-rich foods that are simple and delicious. Juicing and blending have been my preferred go-to for breakfast over the last ten years. I find that it’s a guaranteed and simple way that I can ensure that I have a balanced breakfast that includes protein, vegetables, and fruit. I’ve become somewhat of a smoothie connoisseur by trying out a plethora of variations and recipes. Here’s one of my favorites for energy boosting in the morning. My Blueberry and Cilantro Antioxidant Smoothie is packed with vibrant flavors and powerful antioxidants that are both refreshing and tasty. Do try this at home. -LH


Ingredients:

- 1 cup of fresh or frozen blueberries

- 1 small handful of fresh cilantro leaves

- 1 ripe banana

- 1 cup of spinach

- 1 tablespoon of chia seeds

- 1 cup of almond milk (or any plant-based milk of your choice)

- 1 tablespoon of honey or maple syrup (optional, for added sweetness)

- Ice cubes (optional, for a chilled smoothie)

- Plant Protein


Instructions:

1. Start by adding the blueberries, cilantro leaves, banana, spinach, chia seeds, and almond milk to a blender.

2. If desired, add a tablespoon of honey or maple syrup for a touch of sweetness.

3. Blend all the ingredients until smooth and creamy. If you prefer a thicker consistency, add a few ice cubes and blend again.

4. Pour the smoothie into a glass and garnish with a sprig of fresh cilantro or a handful of blueberries.
